This is the plan B that ends up becoming plan A. We recommend this terrace to couples who want Monaco without the formality of the listed rooms. Two things to watch: the wind can pick up after nine in the evening, so we always specify weighted florals and protected candles. And think carefully about sound. An outdoor setting calls for distributed speakers rather than one big front-of-house stack, otherwise conversation becomes impossible. The best moment of the night is still the walk from terrace to ballroom, with the view going dark behind you.

Some views have to be earned. This one is simply handed to you. Suspended above Port Hercule, the terrace of the Hôtel Hermitage takes in the moored yachts, the ochre roofs of the old town and, at the far end, the silhouette of the Prince's Palace on its rock. At sunset everything turns gold. Around ten in the evening the city lights up and the whole scene changes again, without anyone lifting a finger. The space is larger than couples expect on their first visit. It holds a seated dinner for a substantial guest list, a standing cocktail, a ceremony facing the sea, or all three, simply by moving your guests from one end of the terrace to the other as the evening unfolds. The flooring, the balustrades and the low planting create a natural frame, almost a stage set, that asks for very little intervention. And the Salle Belle Époque sits directly behind it, which makes the weather a far less frightening subject than it usually is.
